Mom’s Bacon Rice


Ingredients:

5 slices bacon (or desired)
3 cloves garlic
3 cups cooked rice
½ teaspoon salt
¼ teaspoon pepper
Oil or butter

Procedures:

  • ·         Fry bacon until crisp on oil or butter.
  • ·         Add garlic until it becomes light brown.
  • ·         Add mix rice, salt and pepper.
  • ·         Blend well.

Mom's Cinnamon Rolls

Ingredients:

7 cups 1st class flour
3 tablespoon yeast
2 cups evaporated milk
1/2 cup sugar
1/2 cup oil
1/4 cup water 
2 teaspoon salt
2 eggs
3/4 cup brown sugar
1 1/2 tablespoon cinnamon
1/4 cup butter

Procedure:
  • In a large mixing bowl, combine 3 1/2 cups of flour and yeast.
  • In sauce pan, heat milk, 1/2 cup sugar, 1 tsp salt.
  • Add to dry ingredients in mixing bowl. 
  • Add eggs and oil.
  • Put the remaining flour. Stir until it makes a soft dough
  • Turn to flour surface, knead until smooth
  • Placed in greased bowl. Let rise until double.
  • Divide dough into half about 1 inch thick
  • Brush surface of dough with water
  • Sprinkle with cinnamon, and sugar mixture. Then roll.
  • Bake until golden brown.

Coco Pie (Buko)

Ingredients:

Filling:

2 cups buko strips
3/4 cup white sugar
1 teaspoon vanilla
1/2 cup flour
1/2 cup evaporated milk
1/2 cups coco water

Crust:

2 1/2 cups all purpose flour
2 tablespoon sugar
1/4 teaspoon salt
2/3 cup margarine
5/6 tablespoon coco water

Procedure:


  • Mix flour, sugar, salt and margarine.
  • Pour coco water slowly to flour mixture until it forms into dough to make the crust
  • Knead and form into two balls. One is smaller than the other.
  • Place in pie plate.
  • Pour the filling, then put the smaller dough at the top
  • Bake until it turns into golden brown.

Mom's Rice Cake (Bibingka)

Ingredients:
4 eggs
2 cups coconut milk
1 cup sugar
1/4 cup margarine
2 cups rice flour
2 tablespoons baking powder
1/2 teaspoon salt
1/4 cup coco cream, 1/4 cup sugar for toppings

Procedure:

  • Add sugar to well beaten eggs
  • Combine salt and flour; add to egg mixture
  • Add melted margarine, coconut milk and baking powder
  • Pour into banana leaf-lined mold
  • Bake in 190.5 degrees Celsius oven
  • Brush top with coco cream and sugar when half done
  • Bake until golden crust is formed
Servings: 3 large rice cake (bibingka)
